特点及应用:Characteristics and usage:
β-环糊精分子具有一个独特的分子内空腔。化合物分子被环糊精空腔包结时,大大减少了其与周围环境的接触,可以起到许多特殊的作用,并且在工业生产中得到广泛的应用。目前已知的作用有以下几个方面:
β-cyclodextrin molecule has a unique cavity. When molecule of a certain compound is trapped in the cavity, its contact opportunity with other substances becomes noticeably less. So, β-cyclodextrin has some special functions, it is used widely in industry. Its known functions are listed below:
1. 使挥发性物质长期保持稳定 stabilize volatile substance
① 降低挥发性物质的挥发性,并保持其气味、风味;Reduce volatility of volatile substance to keep its smell and taste;
② 将有毒液态物质制成固体,容易保存,减少毒害;Turn toxic liquid into solid to facilitate storage and reduce toxicity;
③ 除去发臭物质的臭气,并改善加工和使用条件;Reduce the odor of some reeking substance to improve the process and use conditions;
④ 调节芳香物质和其他挥发性物质的释放。Adjust the release rate of aromatic substances or other volatile substances.
2. 使受热、光、氧不稳定的物质稳定化 stabilize the substance that easily decomposed in thermal, light or oxygen.
① 使不耐热物质在高温中保持稳定;Improve temperature resistance;
② 使紫外线和可见光下不稳定性物质保持稳定;Improve light resistance;
③ 使易被氧化和分解的物质稳定。Improve oxidation resistance;
3. 改变物质的物理、化学性质Adjust physical and chemical properties
① 增大难溶或不溶于水的物质的溶解度;Increase water solubility;
② 防止色素、荧光变化;Prevent degradation of pigment and fluorescein;
③ 掩盖怪味、苦味,增加物质的使用价值;Reduce strange odor and bitterness;
④ 易自行分解、潮解、粘性物质稳定性的改善;Stabilize substances easily to decompose, deliquesce and become sticky.
4. 水不溶物的乳化、液化,如油、脂肪、脂肪酸等的乳化 Make some substances become dissolvable or emulsifiable.
5. 液体变固体,如烃、醇、酯、油、脂肪等Change some substance from liquid to solid, such as hydrocarbon, alcohol, ester and fat.
6. 用做有机化学的催化剂,选择合成反应试剂,物质的分离、分析、医疗化验等。Act as catalyst in organic chemistry, used in chemical separation, chemicals analysis, medical analysis and so on.
